Piadini (Roman quesadillas)
Ingredients:
- 1 cup flour
- 1/3 cup water (a bit of oil or butter would not hurt)
- 1 tsp baking soda
- 1 pinch salt
- Enough cheese to cover two tortillas
- 6 slices turkey bacon
Instructions:
Cast iron pan fry bacon but do not drain the grease off the slices. Mix flour, water, baking soda, and salt into a dough. Separate dough into 4 parts. Roll out dough parts into 4 tortillas. Put each of the tortillas in the pan and cook till done. Two minutes max each with about 3 turns total. Put cheese on two of the tortillas. Top the cheese with the greasy turkey bacon. Add more cheese. Put remaining tortillas on top of the two built up tortillas. Press down and heat from the warm tortillas will melt the cheese. Slice and eat.
