Panna Cotta:

Ingredients:

  • 1 envelope (1/4 ounce) unflavored gelatin
  • 3 cups whipping cream
  • 1/2 cup sugar
  • 1 pinch salt
  • 1 tbl pure vanilla extract
  • Honey to cover bottom of ramekins
  • Maple syrup.

Instructions:

   1. Place 1/4 cup cold water in a small bowl; sprinkle with gelatin. Set aside to soften ( 5-10 minutes )

   2. In a medium sauce pan, combine whipping cream, sugar, and a pinch of salt.

   3. Bring to a boil; remove from heat. (watch carefully as it will boil over easily and could start a fire)

   4. Add vanilla and softened gelatin mixture; stir until dissolved

   5. Put a teaspoon of honey in bottom of each ramekin, Divide mixture among ramekins. Chill, covered with plastic wrap until firm, about several hours (overnight is better).

   6. To serve, run a small knife around the edge of each panna cotta to loose, and carefully dip bottom of ramekin in hot water for a few seconds.

   7. Invert ramekin onto a small plate, holding both tightly, shake firmly to release panna cotta onto plate.

   8. Drizzle each panna cotta with maple syrup, if desired of course.
