1lg. onion (chopped)
2 Sticks of butter
1 Can whole kernel corn
1 Can cream style corn
1 Pkg. corn muffin mix
1 (8 oz.) ctn. sour cream
2 eggs
1tsp. salt
pepper to taste
Cheddar Cheese
Sauté onion, salt and pepper in butter until tender, add corn and muffin mix. Cool slightly before adding the beaten eggs; pour in 9x13 inch greased dish; drop teaspoons of sour cream over mixture (do not stir). Cover with cheddar cheese; cover dish and bake at 350 degrees for 35-45 minutes.
